When there’s more month than there is money, you sometimes have to get creative with your dinner options. I came across this recipe, and it was a hit with my family. It’s in my dinner repertoire now, and I make it fairly often.
I don’t really have a title for it, but here goes!!
1 lb. ground beef or turkey
3 packages beef flavored ramen noodles
1 small box frozen mixed vegetables.
Brown and drain your meat. Cook ramen according to directions, but do not add the flavor packet. Drain noodles. (I also rinse them, ramen is surprisingly high in fat) Toss together noodles, meat, and seasoning packets.
Add frozen vegetables at simmer until everything is cooled through.
I double this recipe for my family, but they are big eaters, and then I usually have enough leftover for lunch the next day! I’m making this recipe tonight, and it cost me $6.10 for a double recipe!!
